#MeatlessMonday Curry sweet potato, broccoli soup!


Even though it’s spring, it still feels like winter and nothing warms your soul like a big bowl of homemade soup

This soup if super healthy, nutritious and filling

You’ll need

1 big sweet potato

1 bunch of broccoli

1 carrot

1 onion

4 cloves of garlic

3 cups of vegetable broth

1 can of coconut milk

1 cup of water

2 tbsp of fresh ginger

2 tbsp of curry powder

2 tbsp of maple syrup

1 tbsp of turmeric

Salt and pepper

Dave Fruits on Main Street has the best and most affordable fruits and vegetables and you can make this soup for practically nothing if you stock up there

Chop all the veggies and add everything (minus the coconut milk) to a big pot and boil for about 20 minutes or until potatoes are soft.

Put it in a blender (you may have to do this in section as your blender will probably not be big enough to fit it all)

Once all blended put it back in pot, add the coconut milk and keep on low for 10 minutes!
