Armadillo Eggs


  • 8 jalapenos
  • 4 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/4 teaspoon garlic powder
  • 1 pound ground sausage 
  • slices bacon
  • toothpicks



  1. Preheat oven to 400 degrees. Line a baking sheet with aluminum foil. Place a baking rack on top.
  2. Cut a thin sliver out of one side of each jalapeno and scoop out the seeds and membranes.
  3. In a medium bowl, mix together cream cheese, cheddar cheese, and BBQ rub
  4. Fill jalapenos with cream cheese mixture.
  5. Mold a piece of sausage around each jalapeno.
  6. Wrap a piece of bacon around each one, securing with a toothpick. Place on prepared baking sheet.
  7. Bake for 25 to 30 minutes or until bacon is crispy. (Internal temp 165)
