Dinner Idea: Chicken Empanadas for the family!

*Note, I had leftover filling, so you can make more later if you make more dough for it! *
Dough:
2 cups self rising flour (2 cups flour, 3 tsp baking powder, 2 tsp salt)
2 cups 0% unflavoured Greek yogurt

Filling:
3 chicken breasts
1 packet taco seasoning
1 packet light cream cheese
1 jar salsa
1 can black beans
1 can corn

Slow cook chicken with taco seasoning. Shred and set aside.

Preheat oven to 425.

Line cookie sheet with parchment paper.

Mix dough ingredients together. Roll balls out onto floured surface. I got 7 pieces with this recipe.

Add the rest of the filling ingredients to chicken, mixing well.

Fill dough with filling, pressing edges shut with fork.

Bake for 17 minutes. Then turn oven to low broil to get that golden colour on the top!

Top with extra salsa, hot sauce or sour cream. Maybe even more cheese? Who doesn't love that!
